Camping Burgers, Perfected: Easy & Crave-Worthy Smash Burgers

Smashburger by Campfire

There’s something about that first meal after camp is set up. You’re hungry, a little tired, and eager to settle into the space. You want something satisfying, fast, and nearly impossible to mess up. Enter the smash burger.

Smash burgers are my absolute go-to camping burgers. They’re fast, simple, and satisfyingly decadent after a day of travel and setup or day of exploring. Plus, they’re just fun to make.

And from a nutrition perspective? This is a camping treat we are here to enjoy as part of our overall balanced lifestyle!

Not only are smash burgers easy, they’re practically made for live fire cooking. With most campfire meals, you need to fuss over flame height and temperature zones—but not with smash burgers.

The hotter, the better. That means no stressing over fire control, just get it screaming hot and you’re halfway there.

And if you want to make it Instagram-worthy? Nothing beats the visual of a plancha sizzling over fire and a crusty burger releasing wisps of beefy smoke into the air. Let’s break down everything you need to make the best camping burgers of your life.

And if you’re at home? Simply crank your stove to high heat or use a ripping hot grill with a griddle insert. It’s the same game plan.

Cast Iron or Carbon Steel Plancha

A large cast iron or carbon steel plancha (flat griddle) is ideal for smash burgers. A cast iron skillet works too, but the walls can get in your way when you’re smashing and flipping. The plancha’s flat surface gives you the space to work each patty comfortably.

I personally use the Made In griddle, though I have ditched their stands in recent cooks, which are wobbly on uneven ground. A basic campfire grate with the plancha on top is a much more stable setup. Made In Plancha Griddle Pan

At home, I’ll throw the plancha straight on the grill or use it over high heat on the stove. Just be ready for some smoke.

Burger Smasher or Heavy Spatula

A proper burger smasher is compact and worth the space in your kit. While a large, flat, unperforated spatula can work, it requires extra effort and you’ll need to press directly on the top, risking a handful of steam burns or hot grease splatter.

A weighted smasher lets you easily press the patties thin for that coveted lacy, crispy edge.

Ingredients [for Two Double Smash Burgers]

  • 16oz (1 lb) 80/20 ground beef (four 4oz balls)
  • Salt
  • 2 burger buns
  • 4 slices of cheese (optional)
  • Your favorite burger toppings (pickles, mayo, bacon etc.)
  • Neutral oil for the pan

Want something a little lighter? Simply stick to one patty per burger instead of stacking them double.

Directions

1. Prep the Patties at Home

Before you hit the road, portion your ground beef into 4oz balls. Use 80/20 ground beef; the fat content is essential for flavor and crust formation. Handle the meat just enough to form the ball; overworking can toughen the burger, while underworking may cause it to crumble when flipped.

Don’t salt the meat yet. Salt pulls out moisture and can mess with the texture if done too early.

2. Build the Fire

Once your camp is set, get that fire blazing. Wait until the smoke burns clean (blue-gray in color) before placing the grate and plancha on top. Wipe a little oil on the cold pan beforehand to prevent sticking.

Let the plancha heat until it’s smoking. This is when it’s ready for burgers. No extra oil needed. Feel free to throw on another log or two to keep things at a medium inferno while cooking.

If making at home, crank your stove burner to high or preheat your grill with a griddle until it’s shimmering hot. You want the pan almost uncomfortable to stand next to.

3. Toast the Buns

Place buns face down on the plancha as the the fire is picking up heat. It should only take a minute or so to get them perfect so monitor them closely to avoid burning. Set aside.

4. Salt and Smash

Right before the patties hit the heat, generously salt the top of each one. Place the patty salted side down on the pan, then salt the exposed side.

Immediately smash the patty with firm, even pressure, rotating the smasher 360 degrees to ensure maximum contact and a level crust. Once smashed, leave them alone.

5. Cook and Flip

The first side will take about 90 seconds, but this depends on how hot your fire is—I recommend a test patty first. When it’s time to flip, scrape all the stuck bits (fond) with the patty. That caramelized crust is pure burger gold.

Let the second side cook for about two-thirds the time of the first, usually around 60 seconds.

6. Cheese and Finish

If you want cheese, add it about 30 seconds after flipping and tent the burgers with foil to help it melt faster.

7. Assemble and Serve

Assemble with your favorite toppings on the toasted buns. Serve and enjoy hot!

At home, the same assembly rules apply: crispy patty, gooey cheese, and toasted bun is all you need.

Camping burgers have to walk a fine line between effort and reward. Smash burgers hit that sweet spot: minimal prep, quick cook, and an unbeatable flavor payoff.

They’re also highly customizable. Add onions, jalapeños, or even a swipe of spicy mayo, the base burger is simple but versatile.

Plus, the sheer heat of the fire makes them practically bulletproof for first-night cooking or a late arrival back to the site after adventuring, when your energy is better spent soaking in your surroundings.

And if you’re cooking these at home? The method doesn’t change, just the heat source. High heat, a hot pan, and a simple smash. The results are just as crave-worthy at your stove as they are under the stars.

Can you prep these smash burgers ahead of time?

Yes. You can portion the beef at home and keep it chilled until cooking. For best results, wait to smash the burgers until they hit the hot pan at camp.

What’s the best way to cook smash burgers while camping?

A hot cast-iron or carbon steel pan over a campfire or camp stove works best. High heat helps create the crisp edges and caramelized crust that define a smash burger.

Do you need special equipment to make smash burgers at camp?

No. A sturdy spatula and a flat cooking surface like cast iron are all you need. The technique is simple and well-suited for camp cooking.

Can you make these burgers at home instead of camping?

Yes. The same smash burger method works on a stovetop at home using a cast-iron skillet over high heat.

Burgers taste better outdoors, that’s just science. But when you master the smash burger technique over fire, you elevate your camping burgers from just another meal to a ritual.

Every sizzle, every crispy edge, is a reminder that good food doesn’t need a kitchen, just a little heat and a lot of hunger.

Whether it’s your first night setting up camp, a casual dinner by the fire, or even just a weekend dinner at home, smash burgers deliver every time. And after one bite, I promise you’ll never want frozen patties or boring grill burgers again.
