  Preparation Instructions at Home

  1. Prepare the Skillet: Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Season and Cook the Chicken: Season chicken breast with salt and pepper. Add the chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until it’s fully cooked and no longer pink in the center.
  3. Shred the Chicken: Once the chicken is cooked and cooled slightly, shred it using two forks.
  4. Add Vegetables: In the same skillet, add the sliced bell pepper and onion. Sauté for 3-5 minutes until soft and slightly caramelized. Season with salt and pepper to taste.
  5. Mix Chicken and Vegetables: Return the shredded chicken to the skillet with the sautéed vegetables. Stir to combine, cooking for another 1-2 minutes to blend the flavors.
  6. Layer Ingredients: Place 1/4 cup of shredded cheese and 1/4 cup of the chicken-vegetable mixture onto two of the tortillas. Top each with the remaining tortillas to form the quesadillas.
  7. Wrap for Storage: Wrap the quesadillas tightly in foil for easy storage in your cooler.

 Finishing Instructions at the Campsite

  1. Grill the Quesadillas: Place the foil-wrapped quesadillas on a grill grate over the campfire or directly in the fire. Cook for 5-7 minutes, flipping halfway through, until the cheese is melted and the tortillas are crispy.
    • Making these at home? Cook the assembled quesadillas in a skillet over medium heat for 2–3 minutes per side until golden and the cheese is melted. You can also bake them at 400°F for 8–10 minutes on a baking sheet, flipping once halfway through for even crisp.
  2. Serve: Carefully unwrap and cut into wedges. Enjoy warm around the campfire! Serve with salsa and sour cream if desired.
  • Add Extra Flavor with Spices: For an extra kick, sprinkle some cumin, chili powder, or smoked paprika onto the chicken and vegetables while cooking. It adds a nice smoky flavor that pairs perfectly with campfire cooking.
  • Customize the Filling: Feel free to get creative with your quesadilla filling! Swap out the chicken for ground beef, turkey, or even black beans for a vegetarian option. You can also add extras like corn, jalapeños, or avocado for additional flavor and texture. This flexibility makes it easy to cater to different tastes and dietary preferences at the campsite.
  • Use a Cast Iron Pan or Griddle Pan for Crispier Quesadillas: If you want an even crispier quesadilla, cook them directly on a cast iron skillet or griddle pan over the campfire instead of keeping them in foil. This gives the tortillas a perfect golden-brown crunch. Just remember to flip them carefully to prevent burning!
