The best outdoor meals don’t have to take over your day—and these camping tacos prove it. They come together fast over the fire, but taste like you planned ahead (because you did!).
A little prep at home, a simple fire setup at camp, and suddenly you’re eating something bold, balanced, and deeply satisfying.
With just a griddle, a skillet, and a campfire, you get something smoky, creamy, tangy, and a little spicy—everything you want after a day in the sun.
They’re simple to execute but smartly layered: pre-cooked sweet potato wedges get seared over the fire for earthy sweetness and caramelized edges, ranch beans add smoky umami and protein, and a bright, herby green sauce ties it all together.
You’ll hit every texture and macro without even trying. And yes—your dog deserves a couple wedges of sweet potato too!

Instructions at the Campsite:
1. Build your fire (or Heat up your grill/camping stove)
Let it burn down to solid embers. Set a grate over the coals and preheat your griddle and skillet.

2. Sear the sweet potatoes
Place pre-cooked wedges on the hot griddle with a little oil. Salt as you go. Sear 2–3 minutes per side until golden and lightly crisped.
3. Heat the beans
Pour into a small cast iron skillet and warm over indirect heat, stirring occasionally. Let them thicken slightly and pick up a little smoke.
4. Toast the tortillas
Lay them on the griddle for 30–60 seconds per side. Once puffed and charred in spots, stack and wrap in foil to keep warm. Watch these closely – they’ll burn easily.
5. Assemble the tacos
Spoon beans onto each tortilla. Add sweet potato wedges, pickled veg, cheese, a squeeze of lime, and a drizzle of spicy green sauce. Serve hot.

Nutritional Wins for These Camping Tacos
These tacos offer a great balance of flavor and nutrition without requiring refrigeration-heavy ingredients or complicated prep.
- Sweet potatoes provide slow-burning carbs, potassium, and beta-carotene—and hold up well to pre-cooking and fire-searing.
- Ranch beans offer plant-based protein, fiber, and iron in a single can.
- Greek yogurt, contributes complete protein and probiotics, supporting digestion and satiety outdoors.
- The pickled veg and lime juice cut through the richness and offer a little boost of acidity and trace minerals after a warm day.
This is a vegetarian campfire meal that’s satisfying without being heavy, nutrient-dense without feeling like a “health food,” and flexible enough to repeat again and again.

Variations & Swaps
- Make it vegan: Use plant-based mayo and skip the cheese.
- Swap the beans: Any canned pinto or black beans work. Simmer with a pinch of cumin and chili powder.
- Tweak the sauce: No jalapeño? Use hot sauce. No blender? Chop it all finely and stir into mayo or yogurt for a rustic mix.
