Elotes Pasta Salad That Beats Every Boring Side

October 30, 2025 By Angela Graham

Elotes Pasta Salad is everything you want in a summer dish. It’s bright, creamy, and easy to prepare ahead. It turns the irresistible taste of grilled Mexican street corn into a silky pasta salad that feels elevated enough for entertaining but simple enough to serve on the picnic table.

Each forkful brings contrast: charred corn that tastes like sunshine, chewy pasta, tangy lime dressing, and the soft crumble of cotija cheese. The combination feels indulgent but balanced, with smoky paprika and chili adding just enough depth to keep each bite interesting.

It’s the kind of recipe that makes you question why anyone settles for plain chips or store-bought sides. While it works beautifully as a side, this salad has no problem standing alone. Pack it along for for a mouth-watering lunch or a midday camp snack!

(Serves 6)

  • 8 oz (225 g) short pasta such as penne, elbows, or rotini
  • 1½ cups (240 g) corn kernels (from 2 grilled ears or fire-roasted frozen corn)
  • ⅓ cup (40 g) crumbled cotija cheese or feta
  • ¼ cup (60 g) mayonnaise
  • ¼ cup (60 g) sour cream or Greek yogurt
  • 1½ Tbsp lime juice (about 1 lime)
  • 1 tsp lime zest
  • ½ tsp chili powder
  • ½ tsp smoked paprika
  • 1 small garlic clove, grated
  • ½ tsp salt, plus more to taste
  • Optional: chopped cilantro, extra lime wedges, or a drizzle of hot sauce
Three ears of corn grilling over glowing charcoal coals.
  1. Cook the pasta
Bring a pot of salted water to a boil and cook pasta until al dente. Drain and rinse briefly with cool water to stop cooking.
  2. Char the corn
If using fresh corn, grill corn over hot coals or toast in a dry skillet until lightly charred. Cut kernels from the cob. If using frozen corn, toast it in a dry skillet until golden brown in spots. Let cool slightly before adding to the salad.
  3. Make the dressing
In a large bowl, whisk together mayonnaise, sour cream, lime juice, lime zest, chili powder, smoked paprika, garlic, and salt.
  4. Assemble the salad
Add cooled pasta, corn, and cotija cheese to the bowl. Toss until well coated. Stir in cilantro if using.
  5. Chill
Cover and refrigerate for at least one hour before serving to let the flavors develop.
  6. Finish and Serve
Serve cold or at cool room temperature.
Before serving, refresh with a squeeze of lime or a few drops of hot sauce to wake up the flavors if desired. Garnish with extra cilantro. (It’s even better the next day, making it ideal for camping, tailgates, or easy weekday meals!)

This salad offers steady energy from the pasta and protein from the cheese and yogurt. The creamy base provides healthy fats for satiety while lime and spices keep the dish feeling light. It’s the perfect balance of comfort and freshness, giving you the richness of a creamy side without heaviness.

As a bonus, the nutrient mix makes it a smart choice for active days outdoors. It fuels hiking or swimming just as easily as it complements grilled food at home.

Can you prep this ahead?

Yes. This salad tastes best after a few hours of chilling, so it’s ideal for making the night before a trip or cookout.

What’s the best campfire method?

This recipe is fully prepped before you ever head to camp, so no cooking is needed on-site. The best approach is to grill or toast the corn at home before mixing the salad. Once chilled, it’s ready to serve straight from the cooler — no campfire required.

How do you store leftovers?

Keep chilled in a sealed container. Stir before serving and, if needed, add a squeeze of lime or spoon of sour cream to refresh the dressing.

Elotes Pasta Salad is proof that simple ingredients can create something special. It’s creamy, bright, and full of texture, with that little bit of smoke that makes it feel restaurant-worthy. Bring it to a campsite, picnic, or backyard table and watch it disappear.

Skip the chips or tired sides and make something that feels fresh and thoughtfully made instead. This salad looks beautiful in a bowl, holds up to travel, and satisfies every craving for creamy, tangy comfort!
