Tomato Cucumber Quinoa Salad

Add a burst of freshness to your camping meals with this Tomato Cucumber Quinoa Salad. This is one of my favorite nutritious lunches!

Made with fluffy quinoa, juicy tomatoes, crisp cucumbers, and a zesty dressing, this salad is a light and nourishing dish with a surprising punch of flavor that’s perfect for any outdoor experience or an amazing meal prep lunch for the week.

A tomato cucumber quinoa salad is an excellent make-ahead option for camping because it’s easy to prepare, stores well, and provides a lean source of protein and fiber.

It’s a versatile lunch or dinner that pairs well with grilled meats, fish, or even as a stand-alone meal for a light and refreshing option.

Ingredient List:  [Per 2 Servings]

  • 1/3 cup quinoa (dry)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

   Preparation Instructions at Home

  1. Cook the Quinoa: Rinse the quinoa under cold water to remove bitterness in a fine-mesh strainer. (About 1-2 minutes)  In a pot, combine the quinoa with double the amount of water (about 2/3 cup for 1/3 cup quinoa). Bring to a boil, then reduce to a simmer for about 15 minutes or until the water is absorbed. Let it cool completely.
  2. Prep the Veggies: Halve the cherry tomatoes, dice the cucumber, and slice the kalamata olives. Crumble the feta cheese.
  3. Assemble the Salad: In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, feta, and olives.
  4. Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the quinoa mixture and toss well to coat.
  5. Pack for Camping: Divide the salad into containers or jars. Seal and store them in your cooler, keeping them chilled until you’re ready to eat.

 Finishing Instructions at the Campsite

  • Serve: Shake or stir the salad before eating to distribute the dressing evenly. Enjoy a refreshing, light meal straight from your container.
  • Add in Additional Protein: Consider adding your favorite meat for additional protein! I’ve made my latest batches with shredded chicken and it’s turned out phenomenal!
  • Save Time with Pre-Cooked Quinoa: If you’re short on time, you can buy pre-cooked quinoa from the store. It cuts down prep time significantly and is just as nutritious.
